The results revealed that rutin and quercetin inhibited the synthesis of fructosamine, dicarbonyl compounds, and fluorescent AGE in a concentration-dependent way. Rutin and quercetin exhibited anti-oxidant task and could lessen the formation of necessary protein oxidation services and products.
